Summer is a time for enjoying lots of fresh vegetables and I thought I’d share one of my favorite salads and movies.

Dig Deep Salad

1 head lettuce (shredded)
1 medium red onion (sliced thin)
1 green pepper (sliced)
3-4 ribs celery (chopped)
8 oz. water chestnuts (sliced)
10 oz. frozen peas (uncooked)
1 ½ cup Hellman’s mayonnaise
Romano or Parmesan cheese
3 hard-boiled eggs
4-6 strips bacon (cooked and crumbled)
1 large tomato (sliced)

Layer first six ingredients in a large clear bowl. Spread mayonnaise over top and sprinkle generously with cheese. Do not stir. The salad is very pretty and colorful in the clear bowl. Cover and refrigerate for up to 24 hours. Remove from refrigerator 45 minutes before serving and garnish with eggs, bacon and tomato. Then, you toss well.
If you want to make a meal of it, add some cold cuts and sliced cheese.

What is your favorite romantic movie?

Mine is Love with a Perfect Stranger. Produced in 1986, it is probably one of the first Harlequin stories to be made into a movie. It stars Marilu Henner and Daniel Massey. It is a fun romance about Victoria Ducane, a beautiful, wealthy American businesswoman and Hugo Delacy, a mysterious Irish or English entrepreneur who meet on a train in Florence. Hugo immediately falls in love with Victoria and I loved watching him maneuver and seduce her. Even the soundtrack left an impression as it will flitter through my mind from time to time.

It was done in VHS format but I would love to find the DVD and watch it again.
